When you mash purple potatoes you get violet mashed potatoes.
One of my neighbors offered me some purple seed potatoes this spring. I planted them and waited. Today we mashed a few of those purple potatoes. They turned violet. They taste good despite the different color.

I love purple potatoes!! got some purple puruvian “seed potatoes” from the seedsavers exchange a while ago. I had a good harvest and invited friends over for a thanksgiving meal! it was spectacular!
